Ingredients
  

Cookies Ingredients:

  • 2- cups all-purpose flour 235 grams
  • 2- sticks of butter 226 grams
  • 2- tablespoon lemon zest
  • ½ teaspoon baking powder
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 1 egg large

Glaze Ingredients:

  • 2-4 tablespoons fresh lemon juice
  • 1 cup powdered sugar
  • Lemon zest additional for garnishing

Instructions
 

Cookies Preparation:

  • Gather all the ingredients, preheat the oven to 350 degrees F, and line two baking sheets with parchment paper.
  • First of all take a small bowl and add flour with salt and baking powder. Whisk them well and put them to one side.
  • Beat the butter, sugar, and lemon zest with the help of an electric mixer until it becomes light and fluffy. It should take about 3-4 minutes. And don't forget to scrape down the bowl's walls at least once while mixing. Or you can do this step with the help of a spatula.
  • Add an egg to the mixture and beat it well. Scrape down the wall again. It would also take 1 minute to combine well.
  • Use a medium-sized cookie scoop to form balls from the dough, and flatten the ball gently with your palm. Spacing 2-inches apart onto a prepared baking sheet.
  • Bake in the oven for 10-12 minutes until cookies are golden brown at the edge. Cool down the cookies on the baking sheet for 5 minutes.

Glaze Preparation:

  • Mix the powdered sugar with lemon juice in a small bowl.
  • Keep whisking until you get a thick but pourable glaze. Spoon the glaze over each cookie.
  • You can garnish glazed lemon cookies with some lemon zest additionally.
  • Let the cookie sit for at least 30 minutes until the glaze is hard.
