Ingredients
  

  • Pasta: 300g such as penne, fettuccine, or spaghetti
  • Olive oil: 1 tablespoon
  • Butter: 2 tablespoons
  • Garlic: 3 cloves minced
  • Onion: 1 small finely chopped
  • Heavy cream: 1 cup
  • Parmesan cheese: 1 cup grated
  • Fresh spinach: 4 cups roughly chopped
  • Salt: To taste
  • Black pepper: To taste
  • Red pepper flakes optional: 1/2 teaspoon, for a bit of heat

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the rest and set the pasta aside.
  • In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.
  • Pour in the heavy cream and let it simmer for 2-3 minutes, stirring occasionally. Add the grated Parmesan cheese and stir until the cheese melts into the sauce, creating a smooth and creamy consistency. If the sauce is too thick, add a bit of the reserved pasta water to thin it out.
  • Add the chopped spinach to the skillet and cook for 2-3 minutes, or until it wilts and blends well with the sauce. Season with salt, black pepper, red pepper flakes, and a pinch of nutmeg if using.
  • Add the cooked pasta to the skillet and toss to coat it evenly with the creamy spinach sauce. Adjust the seasoning if needed. If you like a hint of brightness, add a squeeze of lemon juice.
  • Serve the creamy spinach pasta hot, garnished with extra Parmesan cheese and a sprinkle of freshly cracked black pepper.
