- 2 cups cooked shredded chicken (rotisserie works great)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup shredded cheese cheddar, Monterey Jack, or a mix
- 8 small corn or flour tortillas
- 1 cup vegetable oil for frying

In a mixing bowl, combine the shredded chicken with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well.
Place about 2 tablespoons of the seasoned chicken in the center of each tortilla. Sprinkle shredded cheese over the chicken. Fold the tortillas in half and secure them with a toothpick to keep them closed.
Heat the vegetable oil in a frying pan over medium heat. Once the oil is hot, carefully place the tacos in the pan, cooking 2-3 at a time. Fry for 2-3 minutes on each side or until golden brown and crispy. Use tongs to flip the tacos and remove them from the pan when done. Drain on paper towels.
Remove the toothpicks and fill the tacos with your choice of toppings like lettuce, tomatoes, sour cream, salsa, or guacamole.
Serve immediately with extra toppings or sides like rice and beans.
