- 2-3 lbs boneless skinless chicken breasts or thighs
- 1 cup chicken broth or water
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika optional
Preheat the oven to 300°F (150°C).
Pat the chicken dry with paper towels. Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
Heat the olive oil in the Dutch oven over medium heat. Once hot, add the chicken and sear for about 3-4 minutes on each side until golden brown. (Optional: Add onions and garlic during this step for extra flavor.)
Pour the chicken broth (or water) into the Dutch oven, ensuring there’s enough liquid to partially cover the chicken.
Cover the Dutch oven with its lid and transfer it to the preheated oven. Let it cook for 1.5-2 hours, or until the chicken is tender and easily shredded with a fork.
Remove the chicken from the Dutch oven and shred it using two forks. Return the shredded chicken to the pot and mix it with the remaining juices for extra flavor.
Use the shredded chicken in tacos, sandwiches, salads, or any dish you like. You can also store leftovers in an airtight container in the fridge for up to 4 days.
