Ingredients
  

  • 2-3 lbs boneless skinless chicken breasts or thighs
  • 1 cup chicken broth or water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika optional

Instructions
 

  • Preheat the oven to 300°F (150°C).
  • Pat the chicken dry with paper towels. Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Heat the olive oil in the Dutch oven over medium heat. Once hot, add the chicken and sear for about 3-4 minutes on each side until golden brown. (Optional: Add onions and garlic during this step for extra flavor.)
  • Pour the chicken broth (or water) into the Dutch oven, ensuring there’s enough liquid to partially cover the chicken.
  • Cover the Dutch oven with its lid and transfer it to the preheated oven. Let it cook for 1.5-2 hours, or until the chicken is tender and easily shredded with a fork.
  • Remove the chicken from the Dutch oven and shred it using two forks. Return the shredded chicken to the pot and mix it with the remaining juices for extra flavor.
  • Use the shredded chicken in tacos, sandwiches, salads, or any dish you like. You can also store leftovers in an airtight container in the fridge for up to 4 days.
