Ingredients
  

For Fries:

  • 5 large Russet Potatoes
  • 2 tbsp. Cajun Seasoning
  • Vegetable Oil for frying
  • 1 cup shredded cheese
  • ¼ cup sliced green onion
  • 1-2 tbsp. olive oil (Optional)

For Sauce:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • Hot sauce to taste
  • 1 tsp Cajun Seasoning
  • 1 garlic clove, minced
  • 1 tbsp. lemon juice
  • Salt and pepper to taste

Instructions
 

  • First, pre-hot the oven for about 400°F (200°C) and vegetable oil in a deep fryer or port at 350-400°F.
  • Take the potatoes, peel off their skin, and cut them in shape. After cutting them into fries, soak them in cold water for at least 5 minutes.
  • Remove the fries from the water and let them dry on towel-tissue paper to extract the extra water.
  • Take a large bowl and put the dried fries in it. Also, add salt to taste and cajun seasoning in it. Toss them well until all the fries are covered and look equal.
  • Carefully add these potatoes to a deep fryer in batches. Fry them until golden brown or about 4-6 mins for every group.
  • As the fries are frying, take a small bowl and add mayonnaise, sour cream, hot sauce, lemon juice, cajun seasoning, minced garlic, salt, and pepper. Mix well all the ingredients until smooth.
  • Once all the fries are fried, spread them on a baking sheet. Sprinkle the shredded cheese and then put them in the oven for 5-7 mins or until the cheese is melted.
  • Remove the sheet from the oven and transfer the fries to a serving platter and don't forget to garnish them with sauce and sliced green onion.

  • We all know the fries are fried, but if you are diet-conscious, you can bake them in the oven instead of frying them in deep oil. All the ingredients remain the same; follow the given steps, are you are good to go:
  • After cutting the potatoes into slices like fries, soak them in water for 20 min and then dry them. Keep in mind the potatoes are dried enough.
  • Grease the fries with olive oil, put them in a saucepan, and toss them until golden brown or properly cooked.
  • As the fries turn golden, transfer them onto a baking sheet and spread shredded cheese. Cover the fries with aluminum foil and place them in a preheated oven until the cheese is melted and the fries are baked to perfection.
