Ingredients
  

  • 1 ½ cups granulated sugar
  • 4 tbsp unsalted butter melted
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp all-purpose flour
  • 4 large eggs beaten
  • 1/2 cup evaporated milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 pre-baked 9-inch pie crust

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • If using semi-sweet chocolate, melt it in the microwave or over a double boiler. Allow it to cool slightly.
  • In a large bowl, whisk together the sugar, cocoa powder (or melted chocolate), and cornmeal (or flour).
  • To the dry mixture, add the melted butter and stir until combined. Gradually whisk in the eggs, followed by the milk, vanilla extract, and salt.
  • Stir everything together until well mixed and smooth. The filling will be liquid but thickens as it bakes.
  • Pour the chocolate mixture into the pre-baked pie crust. Smooth the top if necessary.
  • Bake the pie in the preheated oven for 35-40 minutes, or until the center is set but still slightly jiggly. The pie will firm up as it cools.
  • Allow the pie to cool at room temperature. For best results, chill the pie in the fridge for at least 2 hours before serving.
