Moo Shu Beef Recipe

Moo Shu Beef is a popular Chinese dish, often found in American Chinese restaurants. It typically features thinly sliced beef stir-fried with a mix of vegetables like cabbage, mushrooms, and carrots. The dish is usually served with thin, crepe-like pancakes and a hoisin sauce that you spread on the pancakes before adding the beef and veggies. It’s similar to Moo Shu Pork, which uses pork instead of beef.

Ingredients
  

For the Beef Marinade: 

  • 1 lb 450g beef sirloin or flank steak, thinly sliced
  • 1 tbsp soy sauce
  • 1 tbsp rice wine or dry sherry
  • 1 tsp cornstarch
  • 1 tsp vegetable oil

For the Stir-Fry: 

  • 2 tbsp vegetable oil
  • 1 cup shredded cabbage
  • 1 cup sliced mushrooms shiitake or button mushrooms
  • 1 cup shredded carrots
  • 2 cloves garlic minced
  • 2 large eggs lightly beaten
  • 3 green onions chopped
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • Salt and pepper to taste

Instructions
 

  • In a bowl, combine the soy sauce, rice wine, cornstarch, and vegetable oil. Add the sliced beef and toss to coat. Let it marinate for at least 15 minutes.
  • Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the mushrooms, cabbage, and carrots. Stir-fry for about 3-4 minutes until the vegetables start to soften. Remove from the skillet and set aside.
  • In the same skillet or wok, add the remaining 1 tbsp of vegetable oil. Add the marinated beef and stir-fry for about 2-3 minutes, or until the beef is just cooked through. Remove the beef from the skillet and set aside with the vegetables.
  • In the same skillet, pour in the beaten eggs and cook, stirring gently, until they are just set. Push the eggs to one side of the skillet.
  • Return the cooked beef and vegetables to the skillet with the eggs. Add the garlic, green onions, soy sauce, hoisin sauce, oyster sauce (if using), and sesame oil. Stir-fry everything together for another 2-3 minutes, until well combined and heated through. Season with salt and pepper to taste.
  • Serve the Moo Shu Beef with the warmed pancakes or tortillas. For a fun and interactive meal, let everyone assemble their own wraps by placing some Beef Moo Shu on a pancake or tortilla and adding a little extra hoisin sauce if desired.
