Ingredients
  

  • 4 cups fresh pea shoots
  • 1/2 cup thinly sliced radishes
  • 1/2 cup cucumber thinly sliced
  • 1/4 cup feta or goat cheese crumbled
  • 1/4 cup toasted almonds or walnuts optional
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste
  • Fresh herbs like mint or basil optional

Instructions
 

  • In a small bowl, whisk together the olive oil, lemon juice, honey (or maple syrup), and a pinch of salt and pepper. Set aside.
  • In a large salad bowl, add the pea shoots, sliced radishes, cucumber, and any fresh herbs you’re using.
  • Pour the dressing over the salad and gently toss to combine.
  • Sprinkle the crumbled feta (or goat cheese) and toasted nuts over the salad.
  • Taste and adjust seasoning if needed. Serve immediately for the freshest flavor.
