- Chicken breasts: 2 cut into small pieces
- Penne pasta: 1 lb
- Jalapeños: ¼ cup finely chopped
- Heavy cream: ½ cup
- Mushrooms: ½ cup sliced
- Parmesan cheese: ½ cup grated
- Fresh parsley: ¼ cup chopped
- Red bell pepper: 1 sliced
- Green bell pepper: 1 sliced
- Red onion: ½ chopped
- Olive oil: 1 tbsp
- Garlic powder: ¼ tsp
- Cayenne pepper: ¼ tsp
- Salt and black pepper: To taste
- Green Onion: for topping
Boil a large pot of water, add salt, and cook the penne pasta according to the package instructions until al dente. Drain and set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces, season with a pinch of salt and black pepper, and cook until the chicken is browned and fully cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same skillet, add the sliced red and green bell peppers, red onion, mushrooms, and jalapeños. Cook for 3-4 minutes until the veggies are tender.
Add ½ cup of heavy cream to the skillet, followed by ¼ teaspoon of garlic powder, ¼ teaspoon of cayenne pepper, and salt and pepper to taste. Stir everything together and let it simmer for 2-3 minutes to thicken slightly.
Add the cooked chicken back into the skillet with the sauce and vegetables. Stir in the grated Parmesan cheese and cooked pasta. Toss everything together to coat the pasta in the creamy, spicy sauce.
Sprinkle the chopped parsley on top for a fresh touch. Serve hot, and enjoy.
